The family story across three generations

The first hands that shaped Mamma's Sugar belonged to Veselinka. In her kitchen in North Macedonia, she baked the way grandmothers across the Balkans have always baked — with patience, with seasonal ingredients, and with the quiet conviction that food is how you bring people together. Her recipes were not written down so much as remembered. They lived in the order ingredients went into a bowl, in the way a dough was folded, in the texture you knew was right by feel rather than by clock.

Those recipes passed to her daughter, Aneta, who refined them with the same dedication and warmth. Aneta did not invent a new menu — she nurtured the one she inherited, keeping the soul of every dish while making each batch a little more her own. Those same dishes, three generations refined, are what diners now order at Mamma's Sugar Ta' Xbiex and Mamma's Sugar St. Paul's Bay.

When the family's life moved to Malta, the recipes came with them. What started as something baked at home — for friends, for neighbours, for anyone who happened to drop by — slowly became something the family could share with strangers, too. Alen Osman, Veselinka's grandson, now carries the legacy forward as the face of Mamma's Sugar.

The Macedonian heritage shows up most clearly in the Chef's Plates section. These are the dishes a Skopje grandmother might cook on a Sunday — translated for a Maltese dining room without being diluted.

🥩 Hearty Sharska Patty Plate €13.50

The signature. A traditional Macedonian patty stuffed with melting cheese, served with French fries, a fried egg and bread. Named after the Šar Mountains on the Macedonian–Kosovan border, the Sharska is dense, smoky and deeply savoury — the kind of dish that explains why Balkan cooking is built around fire and dairy.

Rolled chicken breast filled with cheese, wrapped in streaky bacon, served with creamy mashed potatoes, grilled vegetables and bread. Uvijach means "wrapped" in Macedonian — the technique here is simple but the layering of fat, smoke and salt is exactly what cold-weather Balkan cooking does best.

Tender cabbage leaves wrapped around minced pork and beef, rice, onions and Balkan spices. Sarma is the dish nearly every household across the Balkans, the Caucasus and Anatolia claims as their own — Mamma's Sugar's version sits firmly in the Macedonian tradition. There is also a Vegan Sarma (€11.50) with rice, leek, onions and carrots.

🍳 Macedonian Breakfast €7.95

Homemade fried dough served with creamy yoghurt, homemade ajvar (a roasted red-pepper relish) and soft cheese. If you want to understand the brand in one plate, order this. It is the recipe Veselinka would have recognised.

🫘 Baked Beans (Vegan) €11.00

Traditional Macedonian baked beans slow-cooked with onions and spices, then baked to a rich, hearty perfection. Proof that "vegan" and "comforting" have always lived comfortably together in Balkan cooking.

For larger groups the kitchen offers a Mixed Grill Platter (€28 / €48 / €75 for 2, 4 or 6 people) — beef patties, chicken breast and thigh, pork belly, sausages, kebabs and Uvijach, served with onions, chilli flakes, fries and fresh bread. It is the closest Malta gets to a Macedonian grill house.
